We chose the name MARCEL because it evokes the older generation, maybe a grandfather or grandmother, that would gather the whole family on a Sunday lunch, to share some traditional dishes just coming out of the oven.
Marcel was born out of the passion of two long standing friends, Alex and Charles.
In 2014, when Alex settled in Saigon to work in advertising, Charles had already been living in Vietnam for 3 years, working as a legal consultant.
In a multicultural city where the food industry was booming, the two Parisian friends immediately reunited around their shared passion. Their insatiable appetite for good food and original concepts quickly led them to dream about opening their own concepts.
They rely on a strong company culture, and creating a positive and stimulating working environment, ensuring great conditions and benefits for all the team members.
As Executive Chef of Marcel Restaurants, Chef Brian Chu is responsible for research, development and implementation for all our brands.
Chef Brian grew up around Dalat and was surrounded with the eating and cooking culture there.
He started working in a kitchen around 18 years old and never stopped since then. He has worked for many renowned restaurants: La Maison, The Kafé, Le Terroir, etc.
After growing his knowledge of French cuisine over the last years, he decided to take part in Marcel Restaurants’ adventure as Executive Chef.
With his willingness to source fresh products, and cook homemade food with a modern twist, he blended easily in Marcel Restaurants.
